
Hi, my name is Paul Illien. I run the family business called Moyglass Bakery. It was established in 1983 by my parents and I took over in 2002. We are situated in the Slieve Aughty mountains in South East County Galway.
I specialise in Organic Sourdough breads, made from flour, spring water a tiny pinch of salt and some seeds on top for decoration. Absolutely nothing else is added to the bread. We have the same starter dough strain since 1983.
My 900 gram 'mediums' or loaves of bread are designed to be breakfast or lunch for one person for one week. That’s €4.30 for an organic spelt breakfast or lunch for a whole week.

We make a selection of cakes which contain fresh fruits including apples, pears, oranges and mixed berries. We also make muffins and buns. We offer a wholesale service to retailers. Email us for more details.
