Organic Spelt Sourdough Bread

This grain has been cultivated since the Bronze Age in Europe. By 500 B.C. it was the most widely grown crop in Europe. Spelt was an important staple in parts of Europe from the Bronze Age to medieval times; it is popular amongst organic growers since it needs few fertilisers or pesticides. Spelt is high in protein and B vitamins. Spelt also contains much less gluten than wheat flour. Therefore people with an intolerance towards wheat find spelt easier to digest. It tastes delious with a slightly sweet and nutty flavour.
